Where HAve I been??

I know, I know I said I was going to blog every day throughout October and this last week I have failed Miserably. But I Can explain Honest.

This last week has been CRAZY. So let’s start with Wednesday and Thursday; Major Bucket list items accomplished here. I am still Buzzing from the amazing time that I had. So as some of you may know I am a massive Drag Race addict, I Should Probably seek out some recovery programme for this. But on Wednesday I got to go and see My Absolute Favourite Drag Queen, Sharon Needles and Alaska Thunderfuck. We got meet and greet tickets which meant I actually met them. Seriously think this may have been the best moment of my life ever. I know I am sad but ya know. Anyway that was followed by a boogie in a Gay bar until the wee small hours of the morning. So Wednesday I ticked off two bucket list items, see a Drag act and go to a Gay Bar. I would say Successful Week.

Now given Wednesdays events, let’s just pretend that Thursday did not exist. Ok; that day never happened.

And since then I have been on a mission for you guys. I have been working on Christmas Recipe Ebook for you lovelies which I hope to have available the beginning of November, Along with this I have been building a Fantabulous New SIte for us which is all pretty and looking, darn good, which also will be up and running soon. I have also been working on a couple of other top secret projects which will be revealed in due course.

So that’s about you all caught up on my life right now. And with a bit of luck we will be back on track and to a regular posting schedule real soon.

Also Blogmas, I will be posting a recipe every single day from December 1st to December 25th, there will be a couple of sneak peeks from the Ebook. But I will need your help to. Is there anything you want me to have a crack at making? Comment Below and I will give it a go, If successfully mastered I will share the recipe with you all.

Why baby Why

Being Plant-based or vegan is one heck of a big change in your lifestyle, it is not a should I buy this top or not kind of commitment, but one where you make a commitment to completely shift your perspective on not only food but skincare, toiletries, hair care, clothes, and accessories. This is a major lifestyle overhaul, sorta like moving in with your boyfriend kind of commitment.

 

Now I am not saying it’s not worth the effort, it absolutely is but the point of this blog is to tell you,  you need a WHY!!

 

Your Why needs to be the thing you turn to when you are struggling that will stop you from scoffing that bacon buttie, digging in for that slice of cheese. You’re why needs to be strong enough to overcome all of your weakness foods. Now it will not work every single time, sometimes we do just crumble, but you need your why.

 

Why is your reason for doing this, whether it’s for the animals, your health, the environment or the “street cred”. It needs to be yours and not someone else’s. Going vegan just cos your bestie is not a recipe for long-term success guys.

 

My why was for my health I wanted to take a more holistic approach to my health and new that a dramatic diet overhaul would help so many of my problems. Knowing my why then helped me to tailor my research to that aspect of a plant-based lifestyle.

 

I was not in this for the animals, growing up in the countryside I have never had a problem with the killing of animals for food, so for me looking at cute baby lambs was not going to stop me from eating meat, also I hate cows so eating them has never been a problem. But learning about the benefits of a meat-free diet and the chemicals that are used to process our foods certainly did help me, all of a sudden meat looks processed and unnecessary. The change in my well being from cutting out dairy was amazing so that kept me strong on that front.

 

By focusing my Why to what is personal to me it has allowed me to be more successful in this, and because I did not overwhelm myself at the start I have had a shift in view towards both the killing of animals for food and the environmental impact of consuming animal products. Which is, in turn, grounding me and making me a stronger person and strengthening my ability to pursue this lifestyle.

So Find your Why and refine it, then follow others on social media who have the same why and build relationships with people on the same page as you, and be strong on your Journey.

Bit of a rambly post but yeah, so what’s your why.

Curried Sweet Potato and Carrot Soup

So The other night I made something sooo delicious I am sooo excited to share it with you:

 

Curried Carrot & Sweet Potato Soup

 

October Wins, its Soup, It’s Orange and its sooo Comfort foodie.

 

Ingredients

  • 2 Medium Size Sweet Potatoes
  • 5 or 6 Medium Size Carrots
  • Half an Onion
  • Clove of Garlic
  • 1 pint Of Vegetable Stock
  • 1 tsp Garam Masala
  • 1 tsp Turmeric
  • 1 tsp Ground Coriander
  • 1 tsp Ground Cumin
  • ½ tsp Garlic Powder
  • ½ tsp Onion Powder
  • ½ tsp Ground Ginger
  • A dollop of Coconut Oil
  • A Splash of Dairy Free Milk

 

Method.

  1. Chop all of your veggies and measure out your spices into a small dish.
  2. Melt the oil in a pan toss in the veggies and the spices, reduce the heat and cover, sweat the veggies for about 10 minutes, stirring occasionally to avoid burning.
  3. Now add the Vegetable stock, bring to the boil  put the lid back on, and simmer for around 30 minutes or until the veggies are all nice and tender.
  4. Now using some sort of blending device blend the soup to make a nice thick creamy delicious soup, adding a dash of your fave dairy free milk to bring it to the desired consistency.

  1. What is the one item you can’t leave home without? – Phone and car, I live in the middle of nowhere so if you want to get anywhere you need a car.
  2. What is the best compliment you have ever received? – I got one today that said I make beautiful Vegan food, literally blushing.
  3. What is the first book you remember reading? – Each Peach Pear Plum and when I was younger I used to know all the words.
  4. What is the first movie you remember seeing? – I no this was not the first movie but the first memorable one was Rocky Horror Picture Show. My mum had been showing us the timewarp after a family party and I watched it one day when she wasn’t looking, I think I was about 6, have been obsessed ever since.

  1. What is your full name? –  Jessica Ruth are my first two names my surname remains a mystery.
  2. Are you named after anyone? Middle name is after my grandmother on my mothers side.
  3. What does your name mean? – My name my was first used by Shakespeare in the Merchant of Venice bus is derived from the Hebrew name Iscah and it means Gift From God.
  4. Where are you from? – The Northwest of England
  5. Where do you live? – A little teeny tiny village in North Wales, so cute picturesque and country.

  7. Which of your parents are you closest to? – Geographically my dad, but only by like three houses.
  8. Which of your parents are you more like? – I am equally like both but physically I have a stronger resemblance to my mumsy.

Cupboard Creations Episode 1

So tonight was one of those mega disorganised nights, where shopping had not been done and dinner was not planned. All I knew was, I fancied Pasta and I should consume at least one veggie, and miraculously I managed to create something super easy and rather delicious so I thought I would share.

Pasta Pesto Leeky Tomato Melange

Ingredients

  • Chosen Pasta
  • A Leek
  • Sundried Tomatoes
  • Coconut oil
  • Sacla Dairy-Free Green Pesto

Method

  1. Boil Your Pasta
  2. Chop your leek and sundried tomatoes to the desired size
  3. Saute your leek in some coconut oil, until soft and then add the tomatoes and cook for a couple of minutes
  4. Once Pasta is cooked drain and stir into the leek and tomatoes. Stir in the desired amount of Pesto and Voila.

Super lazy, super easy, super tasty and pretty much use whatever veggies you have that was just what was in my fridge.
