Curried Sweet Potato and Carrot Soup

So The other night I made something sooo delicious I am sooo excited to share it with you:

 

Curried Carrot & Sweet Potato Soup

 

October Wins, its Soup, It’s Orange and its sooo Comfort foodie.

 

Ingredients

  • 2 Medium Size Sweet Potatoes
  • 5 or 6 Medium Size Carrots
  • Half an Onion
  • Clove of Garlic
  • 1 pint Of Vegetable Stock
  • 1 tsp Garam Masala
  • 1 tsp Turmeric
  • 1 tsp Ground Coriander
  • 1 tsp Ground Cumin
  • ½ tsp Garlic Powder
  • ½ tsp Onion Powder
  • ½ tsp Ground Ginger
  • A dollop of Coconut Oil
  • A Splash of Dairy Free Milk

 

Method.

  1. Chop all of your veggies and measure out your spices into a small dish.
  2. Melt the oil in a pan toss in the veggies and the spices, reduce the heat and cover, sweat the veggies for about 10 minutes, stirring occasionally to avoid burning.
  3. Now add the Vegetable stock, bring to the boil  put the lid back on, and simmer for around 30 minutes or until the veggies are all nice and tender.
  4. Now using some sort of blending device blend the soup to make a nice thick creamy delicious soup, adding a dash of your fave dairy free milk to bring it to the desired consistency.

And so the saga of me continues I told you there were a lot of questions.

  1. What is the one item you can’t leave home without? – Phone and car, I live in the middle of nowhere so if you want to get anywhere you need a car.
  2. What is the best compliment you have ever received? – I got one today that said I make beautiful Vegan food, literally blushing.
  3. What is the first book you remember reading? – Each Peach Pear Plum and when I was younger I used to know all the words.
  4. What is the first movie you remember seeing? – I no this was not the first movie but the first memorable one was Rocky Horror Picture Show. My mum had been showing us the timewarp after a family party and I watched it one day when she wasn’t looking, I think I was about 6, have been obsessed ever since.

  6. Do you like pets? – Depends on the animal, not into reptiles or insects.

  1. What is your full name? –  Jessica Ruth are my first two names my surname remains a mystery.
  2. Are you named after anyone? Middle name is after my grandmother on my mothers side.
  3. What does your name mean? – My name my was first used by Shakespeare in the Merchant of Venice bus is derived from the Hebrew name Iscah and it means Gift From God.
  4. Where are you from? – The Northwest of England
  5. Where do you live? – A little teeny tiny village in North Wales, so cute picturesque and country.

  7. Which of your parents are you closest to? – Geographically my dad, but only by like three houses.
  8. Which of your parents are you more like? – I am equally like both but physically I have a stronger resemblance to my mumsy.

Cupboard Creations Episode 1

So tonight was one of those mega disorganised nights, where shopping had not been done and dinner was not planned. All I knew was, I fancied Pasta and I should consume at least one veggie, and miraculously I managed to create something super easy and rather delicious so I thought I would share.

Pasta Pesto Leeky Tomato Melange

Ingredients

  • Chosen Pasta
  • A Leek
  • Sundried Tomatoes
  • Coconut oil
  • Sacla Dairy-Free Green Pesto

Method

  1. Boil Your Pasta
  2. Chop your leek and sundried tomatoes to the desired size
  3. Saute your leek in some coconut oil, until soft and then add the tomatoes and cook for a couple of minutes
  4. Once Pasta is cooked drain and stir into the leek and tomatoes. Stir in the desired amount of Pesto and Voila.

Super lazy, super easy, super tasty and pretty much use whatever veggies you have that was just what was in my fridge.

Sunday Musings – Spiritual Self Reliance

For me Sundays are the day I go to church and nourish my faith. And whilst I am not one to talk about religion on such forums the Sunday School lesson we had today I think has a far wider lesson than just its application in the church and that was Spiritual Self Reliance.

Self Reliance is the ability to depend on one’s self and know that you have the strength and sense of Identity and resources to handle whatever life throws at you.

Over recent months I feel like the Universe has thrown a lot at us by way of terrorism and natural disasters, dodgy politicians and just the day to day crap that the world decides to launch our way. Which from time to time leaves us all on shaky ground.

Outside of a religious setting, we all need to become spiritually self-reliant. What I mean is that we all need to take time to learn our values, our core beliefs, what makes us tick and what makes us seethe. What we are OK with and what we are not OK with.

We need to take time to get to know our souls inside and out. We live in a world full of conflicting beliefs, what we should and should not do is thrown at us from what feels like a million angles daily and we can so easily fall into the trap of simply just doing things because we are told to.

We are on this earth for but a short time and as I come to understand and realise this it dawns on me that I am not here to please others, to do as they want. I am here on my own journey, my own path, and that might not be a conventional path or one loved ones had envisioned for me but that’s fine it is my path and my Journey.

Discovering a true sense of self and a deeper understanding of my soul through, meditation, learning, and a rather interesting life coaching session, as well for me prayerful consideration. I learn who I am my values and beliefs, and whilst they are not always in tune with the rest of the world, this growing sense of self is increasing my capacity to love, to understand, to respect and to empathise with others, even those whom I thought I would never be able to.

I guess what I am trying to say is that being spiritually self-reliant is so much more than opening a set of scriptures and reading and praying. It is Vital to everyone whether we have a belief in God or not. It is about learning who you truly are and how to feed those unique needs and values of your soul so that you can live harmoniously with the world without losing your sense of self. It is about building up enough inner peace that you can handle whatever life throws at you and grow from every learning opportunity, and see every hardship and trial as a chance to grow.

So Random but they are my Sunday thoughts. How do you build up your spiritual self reliance?

Leekes

Did you know that the Leek is the national vegetable of Wales??

Betcha didn’t. They are tasty delicious goodness and I am going to tell you some leekey facts!

The welsh word for leek is Cenin, and the welsh word for daffodil (the national flower of Wales) is Cenin Pedr which translates to Peters Leek.

When St David the Patron Saint of Wales fasted he would eat only leeks – because they are nutritious and delicious.

Leeks are in the bible and were eaten by the ancient Egyptians

And If that wasn’t enough reason to love them, apparently they are super easy to grow and look at all the nutritional goodness they contains:
