Cupboard Creations Episode 1

So tonight was one of those mega disorganised nights, where shopping had not been done and dinner was not planned. All I knew was, I fancied Pasta and I should consume at least one veggie, and miraculously I managed to create something super easy and rather delicious so I thought I would share.

Pasta Pesto Leeky Tomato Melange

Ingredients

  • Chosen Pasta
  • A Leek
  • Sundried Tomatoes
  • Coconut oil
  • Sacla Dairy-Free Green Pesto

Method

  1. Boil Your Pasta
  2. Chop your leek and sundried tomatoes to the desired size
  3. Saute your leek in some coconut oil, until soft and then add the tomatoes and cook for a couple of minutes
  4. Once Pasta is cooked drain and stir into the leek and tomatoes. Stir in the desired amount of Pesto and Voila.

Super lazy, super easy, super tasty and pretty much use whatever veggies you have that was just what was in my fridge.
